The “Production and Commercialization of *Chifles* in the Guadalupe Community” is contributing to improving producers’ incomes through the production of *chifles* (plantain chips). Significant raw materials are available within the community; plantain production ranks as the second most important crop on local farms. However, a large portion of this harvest goes to waste on the farm itself, as it is a product that cannot be readily traded in the local market because virtually everyone in the area produces it. By adding value through the production of *chifles*, the product has been commercialized—initially within the Guadalupe community—with plans to subsequently expand its reach to Cococho, Campo Redondo Ocalli, and larger markets such as Lonya Grande.
Project Activities Undertaken to Date:
– Meeting held with the producers’ committee to assess the women’s willingness to participate in the project.
– Voluntary participation secured from 5 women for the project.
– Election of three officers: President, Secretary, and Treasurer, to oversee resource management.
– Establishment of an official minute book to record all agreements reached.
– Implementation of a system to track income and expenses generated by the production and commercialization of *chifles*.
– Delivery of equipment for *chifle* production: a slicer, a fryer, and a heat sealer.
– Delivery of kitchenware and supplies: bowls, strainers, bags, etc.
– Disbursement of seed funding for the purchase of raw materials and inputs.
